Lost & Found
Wild. Oak. Maple. A truly local cider reflecting the quality and abundance available in our backyard: this is Lost & Found. Apples picked and foraged throughout the township of Corkery and from our own property.
The 2024 vintage was barrel-fermented in Pinot Noir barrels using the natural yeast found on the skins of the fruit. Aged and finished with a touch of maple syrup from our good friends at Le Vignoble de Chelsea.

The Details.

Nose
Red apple, toffee, spice notes, maple

Palate
Dry, bright acidity with firm wood tannins, lots of spice, and a touch of maple at the end.

Process
Wild fermentation and controlled fermentation done inside Pinot Noire barrels for one month. The barrels were blended together and aged for four months. Bottled, carbonated, and disgorged, this cider is finished with a touch of maple syrup.

Service Notes
Serve well chilled. Let stand upright in fridge until all sediment has settled. Pour slowly and leave some cider remaining in bottle. Fine bubble will rise when open. 4-6 oz pour for best results.
