Hailing a Cab
Bright. Complex. Herbal. The art of hailing a cab is one of location, timing, and determination. Much like opening a farm and cidery.
Cabernet Franc pomace from Kin Vineyard in Carp was macerated on our cider juice and aged five months in Cabernet wine barrels, giving this still dry cider additional complexity and mouthfeel.

The Details.

Nose
Watermelon, tart red fruit, spice.

Palate
Dry, high acidity with some tannic grip, wine funk flavour, flowers, tart red fruit, spice barrel taste.

Process
Fermented Northern Spry apples and let three tons of cabrnet pommace soak as you would a piquette. The soaked wine juice was added at the end of fermentation and transferred to barrels to age for four months. Wild fermented barrels were blended in and this cider was stabilized and served without carbonation.

Service Notes
Serve chilled. Fine bubble will rise when open. 4-6 oz pour for best results. Cocktail glass prefered.
